(4 x 200g
(2 x 200g yellow cherry tomatoes unpeeled)
3 bay leaves
30 ml (2 Tbls) marjoram
3 challots/red onions cut into pieces or 6 spring onions sliced
60 ml (¼ cup) olive oil
freshly ground black pepper
salt
60 ml (¼ cup) sugar
200 ml vegetable stock / (1 litre - 4cups)
2 x 125ml (1 cup) Ina Paarman sundried tomato pesto
5 ml (1 tsps) herbamare (often seasonings)
80 ml (⅓ cup) cream
Place cherry tomatoes in roasting pan. Sprinkle with salt and pepper. Add onions, marjoram, bay leaves and sugar. Place on middle rack of oven and roast for 1 hour or till softened at 100°C. remove and place in mixing bowl. Liquidise tomatoes. Place in large pot and add stock cubes and water. Heat until just warmed through. Add sundried tomatoes pesto and adjust seasoning, add cream if desired.
